 Jumbo Brownie Cookies


These are like having a brownie right from the oven without having to wait 45 minutes for them to bake.  

It only takes 20 minutes to get them into the oven and they are done in 15.  Use the best chocolate chips you can find.  It makes a huge difference in the taste. I used Ghirardelli dark, bittersweet and semi-sweet chips.  Also don't forget the espresso powder, a little added kick is always a good thing.

Ingredients:

  • 2 2/3 cups of bittersweet chocolate chips
  • 1 stick butter
  • 4 eggs
  • 1 1/2 cups sugar
  • 4 teaspoons vanilla extract
  • 2 teaspoon espresso powder
  • 2/3 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups semisweet/bittersweet/dark chocolate chips (which ever one you prefer)
  • 1 cup pecans (optional)
 
1.  Preheat oven to 350 degrees.
2.  Melt chocolate chips and butter in microwave for 1 minute till smooth.  Add 20 seconds till melted
3.  In a small bowl, whisk together eggs, sugar, vanilla extract and espresso powder.  Set aside
4.  In another bowl, whisk together flour, baking powder and salt.
5.  When chocolate has cooled whisk egg mixture into chocolate till smooth.  Add in flour mixture stirring until blended. 
6.  Fold in chocolate chips
7.  Let sit about 10 minutes until thickened.
8.  Drop 1/4 cup of batter onto parchment lined baking sheets.  Bake till set.  It may still look slightly wet on top.  Cool on pans 5 minutes.  Enjoy!!!
