Chinese Five Spice Apple Cake
This recipe comes from Jamie at World Spice Merchants. One of my former students found it and made it in class for our spice unit. It has been a favorite ever since. I hope you enjoy it as much as I have. It is easy and quick to put together. Just right for those leftover apples and last minute desserts for company.
Ingredients
2 cups sugar
1 cup vegetable oil
3 eggs
1 teaspoon vanilla extract
2 1/2 cups flour
1 tablespoon baking powder
3/4 teaspoon salt
2 tablespoons Chinese five spice
3 cups apples
1 cup chopped walnuts
Powered Sugar for dusting
Directions
Preheat oven to 350 degrees. Grease a 9 x 13 pan.
Mix sugar, eggs, oil and vanilla in a large bowl Combine flour, baking powder, salt and Chinese five spice and add to wet ingredients. Mix thoroughly and fold in apples and walnuts.
Pour into pan and bake 45 minutes till knife inserted in center comes out clean. Sift powdered sugar over top.
