Pan Banging Cookies from Sarah Keiffer

Ginger Molasses Cookies
1 3/4 cups flour
2 teaspoon ground ginger
1/4 teaspoon cinnamon
1/2 generous teaspoon salt
1/2 teaspoon baking soda
Pinch cloves

12 Tablespoons unsalted butter, room temp.
1 3/4 cups sugar (divided)
1 large egg
2 Tablespoons mild molasses
1 teaspoon vanilla
Preheat oven to 350
Line 3 cookie sheets with aluminum foil, dull side up
Whisk together flour through cloves and set aside
In mixing bowl cream butter and 1 1/2 cups sugar till creamy 2-3 minutes. Add in egg, molasses and vanilla.
Add flour mixture and mix on low speed till just combined.
Using Large 1/4 scoop drop dough into remained 1/4 cup sugar and roll cookies.
Place one tray in oven and bake for 8 minutes. At this point open oven and drop sheet from corner onto rack. You will see the cookies deflate and spread.
Bake for 2 more minutes and repeat. Do this a total of 4 times to create ridges around the cookie
Cool on sheet 10 minutes then transfer to a wire rack to finish cooling.
Enjoy with a beverage of your choice. Delicious 😋
