Simple Vanilla Cake

  • This recipe comes from pastry chef Jami Curl who wanted an easy vanilla cake.  It is super easy, can be changed up any way you want it and lasts longer than a butter cake.  I have included the website where I got the recipe because they talk about different flavors and add-ons you can make with it.  
  • It is delicious with just whip cream or even to just snack on, on its own.

  • Ingredients
  • 1/3 cups (400 grams) all-purpose flour 
  • 2 cups (400 grams) granulated sugar
  • 1 tablespoon plus 2 teaspoons (20 grams) baking powder
  • 1 teaspoon (5 grams) kosher salt
  • 2 large eggs
  • 1 cup (227 grams) sour cream
  • 1/2 cup (105 grams) vegetable oil 
  • 1 tablespoon (18 grams) pure vanilla extract
  • 1/3 cup (75 grams) boiling water

Directions 

Preheat oven to 350.  Line 9 x 13 pan with parchment paper.

Combine dry ingredients in a bowl.  

Combine eggs, sour cream, oil and vanilla extract, stir till smooth.  

Add to dry ingredients and stir to combine.  

Add in boiling water and stir till smooth.  

Pour into pan and bake 35 to 40 minutes till knife inserted in center comes out clean.  Let cool completely or sneak slices while still warm.  It is delicious either way.
