Orange Madeleines



These just taste of summer.  That sweet intense orange smell and flavor comes thru even more when you use mandarin oranges in these.  They are not as fussy as I thought they would be, but you do need a madeleine pan to make them.  It takes about 1 hour - start to finish, and makes @ 18 cookies/cakes.  Try to not eat them right away and save some for that afternoon cup of tea!

1 stick butter
2 eggs
1/2 cup sugar
2 packed teaspoons orange zest (I used manadrin oranges)
1 teaspoon vanilla extract
1 cup flour
1/2 teaspoon baking powder
pinch salt
1 Tablespoon butter melted for greasing pan

1.  Melt butter and set aside to cool
2.  In the mixer with the whisk attachment beat the eggs and sugar till light,             fluffy and ribbons form when lifted (@ 6 minutes)
3.  Add in the zest and vanilla.
4.  Combine the flour, baking powder and salt.
5.  Fold the dry ingredients into the wet gently, alternating with the melted butter.  
6.  Refrigerate @ 15 -20 minutes
7.  Preheat oven to 350.
8.  Melt tablespoon butter and wipe each mold with it.
9.  Scoop a generous tablespoon of dough into each well in pan, place in oven            and bake for  10 - 12 minutes till it springs back when pressed.
10.  Turn pan over and pop out madeleines.  Let cool completely and enjoy.
