Cranberry Orange Biscotti

Cranberry Orange Biscotti

This is a great recipe if you are looking for something just a little sweet and quick.  They freeze beautifully and a good for weeks since we like them hard so we can soften them up in a hot cup of coffee.

This is the whole recipe.  It can be divided or doubled. I got @ 12 from half a recipe.  They are so good I will probably be making them again before long.

1/2 cup butter
1 cup sugar
2 eggs
1 tablespoon orange zest
1 tablespoon orange juice
1/4 teaspoon vanilla 
3 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup dried cranberries
1 cup walnuts

Preheat oven 325.  Line cookie sheet with parchment paper.
In mixer beat butter and sugar till smooth.  Add in eggs, orange zest, orange juice and vanilla.  Slowly add in dry ingredients and mix till it comes together.  Add in cranberries and walnuts and mix till just combined. 

Dump dough onto cookie sheet and pat into two loaves.  Bake for 20-25 minutes till just turning golden.  Take out and cool completely (@10 minutes).  Slice loaves on diagonal to create biscotti shapes and turn on side.  Place back in oven and bake for an additional 10-15 minutes till golden and dry.  Let cool and store in air tight container.
