oatmeal truffle cookies

This is a great cookie for when you want something quick and easy and chocolatey.  They ooze chocolate as they bake and stay soft and chewy for days, if they last that long.  This recipe is from Two Cups Flour.  Try it out and let me know what you think.   

2 Cups All Purpose Flour

1/2 teaspoon salt

1 teaspoon baking soda

1 teaspoon cornstarch

1 teaspoon cinnamon

3 cups oats 

1 cup brown sugar

1/2 cup sugar

2 sticks butter softened

2 eggs

1 teaspoon vanilla extract

2 cups chopped chocolate truffles

Instructions

1. In a medium bowl combine flour, salt, baking soda, cornstarch, and cinnamon and oat.  Set aside
2. In bowl of stand mixer beat together butter and sugars.
3. Add vanilla, and eggs one at a time. Scrape bottom and sides of bowl as needed.
4. Slowly add in flour and oats until dough is formed.
5. Add in chocolate truffles and pulse a couple of times till mixed in.
6. Cover bowl with plastic wrap and set in fridge to chill for 30 minutes.
7. Preheat Oven to 375 F and line two cookie sheets with parchment paper.
8. Using an ice cream scoop or 2 Tbsp Scoop, measure out cookie dough.
9. Place on baking sheets 2 inches apart.
10. Bake on middle rack for 10-12 minutes.
11. Let cookies cool on pan for 3-4 minutes, then transfer to cooling rack.
