Let’s change it up a bit and do some breakfast cookies before we get to the holidays.  This recipe is from King Arthur flour. It is a morning glory cookie.  It is moist and delicious and just right to enjoy with a cup of coffee in the morning.

2 cups white whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 1/2 teaspoons cinnamon
3/4 teaspoon ginger
1/2 cup coconut oil
1/4 cup butter
2/3 cup brown sugar
1/3 cup sugar
2 large eggs
2 teaspoons vanilla extract
1 cup oats
1 1/2 cups grated carrots
1/2 cup coconut
1/2 cup chopped walnuts
1/2 raisins

Preheat oven to 350. Line baking sheets with parchment
Combine flour through ginger and set aside
Cream coconut oil, butter and sugars till pale and creamy
Add eggs one at a time, then add vanilla
Stir in the dry ingredients and the all the add-ins
Drop by large scoops onto cookie sheets and bake 13 - 15 minutes till they are just set at center.
Cool on rack and enjoy.  They are good warm from the oven.
