Rice Pudding

 


This recipe is adapted from the cookbook "The official cookbook of Downton Abbey" by Annie Gray.  It is easy to make and not too sweet. I did add an extra teaspoon of sugar the second time I made it and I added jam to the bowls when we went to eat it.  It cooks a long time at a low temperature and you are sure there must be some mistake.  There isn't.  It actually gets thick and creamy.  Give it a try.

Rice Pudding

1/2 teaspoon butter, for the cooking vessel

2 1/2 cups milk

3 Tablespoons sushi rice

3 teaspoons sugar

1 teaspoon vanilla extract

1 cinnamon stick


Use butter to coat 4 cup pan or dish.  Preheat oven to 300 degrees.

Combine rest of ingredients in a bowl and whisk together.  Pour into the prepared pan.

Bake pudding for 3 hours uncovered and give a quick stir after 1 1/2 hours.  You know the pudding is done when the skin that has formed is golden brown and the pudding is thick.  Serve warm or refrigerate to serve later.
