I am not a vegan, gluten free type of baker.  I like my eggs, butter, flour and that's how I roll.  BUT . . . . .  this recipe for vegan chocolate chip cookies is AMAZING and you can make it Gluten free by just swapping out the flour for an equal amount of King Arthur Measure for Measure flour.  I even swapped out the sugar for King Arthur baking sugar alternative.  They were great.  I brought them to the gym and everyone loved them.  They are easy to make, hold their shape and you would not know that they are vegan, gluten free.  Enjoy

Ingredients

1/2 cup dark brown sugar

1/2 king Arthur baking sugar alternative

1/2 cup vegan butter, melted

1 tablespoon molasses

1/4 cup tahini

1/4 cup water

2 tsp vanilla extract

1 3/4 cup king Arthur measure for measure flour

3/4 teaspoon baking soda

1/2 teaspoon baking powder

3/4 teaspoon salt

3/4 cup enjoy life mini semisweet chocolate chips

3/4 cup enjoy life dark chocolate chips

Directions

In a large bowl whisk together the brown sugar, sugar, melted butter, molasses and tahini.  Whisk 1- minutes till mixture thickens. 

Whisk in the water and vanilla

 Combine flour, baking soda, baking powder and salt

Add the dry ingredients and use a rubber spatula to mix till the flour is completely mixed in.

Add in the chocolate and refrigerate for 30 minutes


Preheat oven to 350 and line a baking sheet with parchment.

Use a cookie scoop to add dough to sheet.  space out (I used a tablespoon of dough for each cookie)

Bake for 11 -14 minutes till edges are just starting to turn brown.  Rest on sheet for 3 minutes

Will keep for up to 5 days, if you can keep them that long.  Enjoy them warm from the oven for best results :)
