Pop Tarts




 These are so good and freeze well.  Make a batch today and freeze them for when company comes, they will love the adult only flavors to enjoy with a cup of tea.

Pop Tarts



Dough

1/2 cup sour cream

1 large egg

2 1/2 cups flour

1 tablespoon sugar

1 teaspoon salt

12 tablespoons butter, chilled and cut into pieces

3/4 cup jam

1 tablespoon cornstarch

1 tablespoon water


1.  Combine sour cream and egg, whisk together

2.  In food processor combine flour, sugar, salt.  Pulse to combine

3.  Add in butter and pulse till grainy

4.  Add in sour cream mixture

5.  Pulse till dough comes together in ball

6.  Divide into two pieces, flatten out to rectangle and refrigerate at least an hour

7. While dough is chilling, combine your jam flavor with any additions (I did raspberry Jam and crushed pistachios and fig jam with orange juice and zest). Add in the cornstarch and water (or liquid flavors). Stir till combined.  Microwave around 1minute. 

8.  Remove dough from fridge and roll out one piece till thin and rectangle in shape.  Use a ruler to mark the dough into squares.  I used 3 x 3 squares.  Remove to parchment lined cookie sheet and let rest while you do the same to the second piece of dough.  

9.  Place 2 teaspoons on square and cover with another square.  Using a fork, score all around the pop tart to seal dough

10.  Place in a preheated oven 350.  Bake for 22 - 26 minutes till golden brown.

11.  Let cool and enjoy!
