Genius Desserts - Brownies

This recipe is from the new ‘Genius Desserts’ by Food 52.  It comes from Alice Medrich.  I have already made it over and over again.  Soon it will be committed to memory.  IT IS THAT GOOD!!!!  The magic is in the chocolate.  It uses cocoa powder instead of chocolate.  The recipe calls for the ingredients to be melted on the stove, but I also tried it in the microwave and it worked the same.  So either way they are fast, delicious and amazing.

Makes @ 15 large brownies

Ingredients

10 tablespoons of butter
1 1/4 cups sugar
3/4 cup and 2 Tablespoons of cocoa powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract
2 eggs
1/2 cup flour
2/3 cup pecans

1.  Heat oven to 325 and grease an 8x8 pan.  Layer a strip of parchment paper to create a sling.
2.  Combine butter, sugar, cocoa powder and salt in a large bowl set over a pan of simmering water.  Stir occasionally with a wooden spoon until butter is melted and it starts to come together.  It will look gritty.  Remove from heat and stir well.  (Alternately you can do this in the microwave using 45 second bursts and stirring in between.)
3.  Combine vanilla and eggs and stir into cooled chocolate mixture.  When mixed add flour and stir till no flour streaks remain.  Beat vigorously for 40 strokes and add in pecans.
4.  Scrape batter into pan and bake for 20 -25 minutes.  Let cool completely in pan before removing and cutting into bars.
