Baked Falafel Buddha Bowl

This was easy and I did it ahead of time and put everything in separate containers in the fridge.  Then when I was ready I assembled it and put it in the microwave to warm it up.  Hope you enjoy this healthy recipe as much as I did

Ingredients

Falafel
2 cups of canned chickpeas
1 cup chopped parsley
3 garlic cloves
1 lemon, juiced
1/2 tsp salt
1/3 cup almond flour (or any flour you have on hand)

Bowls
1 cup of cooked grain (farro, quinoa, rice, wheat berries )
1 sweet potato diced
1 teaspoon turmeric
3 cups diced broccoli
1 red onion, sliced thin

Cilantro
Olive oil
Salt and pepper
Favorite dressing
I used BRIANNAS cilantro lime
Rotisserie chicken - sliced

Preheat oven to 400.  Place sweet potato in bowl and add 1 tablespoon oil and 1 teaspoon turmeric, toss to coat and place on baking sheet.  Do the same with the onion and broccoli, mixing them together.  Roast for 40 min or until potato is soft when forked.  

Cook grains and drain and set aside

Falafel - Combine chickpeas, parsley, garlic, lemon juice and salt in food processor.  Add flour to help it hold its shape.  Take @2 tablespoons of mixture and form into ball and flatten on parchment lined baking sheet.  Bake in 400 degrees oven for 10 minutes, flip and bake 10 more minutes.  

To make bowls - 
Add @ 1/2 cup of grain to bowl, top with veggies and if you want some sliced chicken.  Cut up some cilantro on top and enjoy.  If you want add some dressing to the bowl.
