Molasses Cookies
This is a new recipe for me. I was given a sample by a gym buddy (shout out to Kristine Goin) and it was delicious. I sat at my desk and ate all the cookies.
delicious. She said I could share it and here it is. It is a soft spice cookie with a ton of flavor. Is easy to put together and the dough can be done ahead of time, cookies rolled in sugar and frozen for baking later. I will definitely be making these cookies again.
Molasses Cookies
4 cups flour
4 teaspoons baking powder
2 teaspoons salt
1 teaspoon cinnamon
1 teaspoon cloves
1 teaspoon ginger
1 1/2 cups melted butter
2 cups sugar
1/2 cup dark molasses
2 eggs
1/4 cup sugar for rolling cookies in
Combine dry ingredients and set aside. In mixer combine butter, sugar, molasses and eggs. Beat well. Mix in dry ingredients till combined well. Chill 2 hours. Place 1/4 cup sugar in bowl and roll cookies in it. Place on cookie sheet 2” apart. They do grow in the oven. Bake at 375 for 8-10 minutes. They will be soft at the 8 min mark. Let cool on cookie sheet and enjoy with a cup of coffee
