roll-out chocolate cookies


This recipe is from the kitchn.  It is a simple chocolate sugar rolled cookie.  But I saw them do gingerbread men and use royal icing to make the skeletons.  It is cute and falls right into this time of year.  If you have older children, let them help.  Who knows what shapes and decoartions they will come up with.

makes 3-3/12 dozen cookies

2 1/2 cups flour
1/3 plus 2 tablespoons cocoa
1/4 teaspoon espresso powder
1 teaspoon baking powder
1/2 teaspoon salt
2 sticks butter, room temperature
3/4 cup sugar
1/2 cup brown sugar
1 egg
2 teaspoons vanilla extract

1.  Sift together flour through salt in a bowl and set aside
2.  Cream butter and sugars together till light in color
3.  Add egg and vanilla
4.  Slowly add flour to mixture till it comes together.
5.  Divide dough into 2 pieces and flatten out between plastic wrap.  Refrigerate 20 minutes or up to 3 days.
6.  Preheat oven to 350. Using cookie cutters cut out shapes and place on parchment lined baking sheets.  Bake for 10 minutes.  Let cool before icing.
7.  Reroll scraps for more cookies.
