First fall cookie

IT IS FALL!!!!  And the one thing I love is the flavors and smells.  You can turn the oven on without worrying about the air conditioning, or heating up the house.  And . . . I LOVE pumpkin spice!!!!  So the first cookie of fall is a pumpkin spice whoopie pie from 'Bake from Scratch'.  It is good and it is better the next day.  It tastes just like you want fall to taste.  The filling calls for mascarpone cheese, but I swapped it out for cream cheese (I didn’t have any!!). 
While exploring these whopping pies on google I found that someone filled them with a Nutella filling, WOW!!!  It might be worth making them again with that.  Let me know what you think in the comments section and enjoy the start of fall.

Pumpkin Spice Whoopie Pies  from Bake from Scratch

1 cup butter, softened
2 cups brown sugar
1 1/2 cups canned pumpkin
2 teaspoons vanilla extract
2 large eggs
3 cups flour
2 teaspoons pumpkin spice
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon kosher salt

Pumpkin spice filling

1 cup butter, softened
4  cups confectioners sugar
2 tablespoons heavy whipping cream
1 generous teaspoon pumpkin spice
1/4 teaspoon salt
8 ounces cream cheese

Preheat oven to 350.  Line baking sheet with parchment paper.
Beat sugar and butter with a mixer till fluffy.  Beat in pumpkin and vanilla.
Add eggs one at a time, beating well after each.

Whisk together flour through salt.  
Add to batter slowly, stopping and scraping after each addition.

Using large cookie scoop (1/4 cup) drop onto sheet 2 inches apart,
with damp fingers pat batter down to flatten tops

Bake for 13 -15 minutes till toothpick inserted in center comes out clean
let cool on tray for 5 minutes.  Remove to racks cool completely.

Filling

Beat butter till fluffy @2 minutes
Add confectioners sugar 1 cup at a time till incorporated
Add in cream, spice and salt till mixed in
Add in cream cheese and beat till smooth and creamy.

Place filling in an icing bag.  Pipe onto bottom of a cookie and top with another cookie.  Refrigerate or freeze till ready to serve.
