Valentine Linzer tart cookies

The Valentine Linzer Tart !!


I always make these at Valentine’s Day.  It is the only time I make them.  And I have a ‘list’!  As my husband is fond of saying ‘are you on the list?’  Because only those people on the list get the cookie.  I have been mailing them out to friends for over 20 years.  They are that good.  This will be the first time I am sharing the recipe.  I hope you enjoy it and add it into your rotation of special cookies.

The Valentine Linzer Tart

Cookie dough
5 cups flour
2 cups sugar
5 tsp baking powder 
1 cup butter
3 eggs
2 tablespoons milk
2 teaspoon vanilla

Filling
Good quality dark chocolate @ 8 oz
Raspberry jam
Powdered sugar

1.  Combine flour, sugar, baking powder together,
2.  Cut in butter
3.  In another bowl combine eggs, milk and vanilla.
4.  Gradually add to flour mixture.
5.  Knead with hands until dough forms a ball
6.  Divide into 4 parts.  Refrigerate till ready to use.  Dough may be frozen up to 6 months

When ready to use.  Roll dough out to 1/4 inch thick and cut out into shape.  Place on parchment lined cookie sheet.  For Valentine’s Day I use a large heart and then cut a smaller heart out of the middle. If you do that make sure to cut enough tops to go with the bottoms.

Bake at 375 till just starting to turn golden on the edges.
Cool on rack.

When cool, melt chocolate in microwave and spread a small amount on cookie bottom using the side that was on the cookie sheet.  Heat jam in microwave till slightly liquid and pour into a icing bag or ziplock bag.  Cut off end and squeeze a small amount on top of chocolate.  Place top on cookie and let cool till chocolate glues cookies together.  Sprinkle with powdered sugar.  Can be frozen and are best the day or two after you make them.  This allows the jam and chocolate to soften the cookie. 💕💕.
